Cast Iron Skillet Chocolate Chip Cookie Pie

I'm not a lover of dessert, never have been. Chocolate Chip Cookies have always been my kryptonite. It really doesn't matter how full I am, there is always rooms for a chocolate chip cookie.

This delicious cookie pie is no exception, after a few times making it and tweaking the recipe, I am thrilled to say it is right where I want it. Without further ado...

  • 1 cup Butter (2 sticks)

  • 1 cup Brown Sugar

  • ½ cup Sugar

  • 2 Large Eggs

  • 1 teaspoon Vanilla

  • 2 Cups Flour

  • ½ teaspoon Salt

  • 1 teaspoon Baking Soda

  • 1 cup Chocolate Chunks or Chocolate Chips


  • Preheat Smoker (or oven) to 325 degrees. (I used a Yoder Smokers YS640)

  • In the cast iron (12" preferably), melt 2 sticks of butter over medium heat. When butter is completely melted, reduce heat to low and brown sugar and sugar. Stir until mixture is smooth and no clumps are visible. Set aside (you can set in the fridge if the mixture is too warm, you will need it cool before proceeding)

  • Beat 2 large eggs until foamy, add vanilla, and add the cooled mixture of butter and sugar. Mix well.

  • Add in flour, baking soda, and salt. Mix well.

  • Add chocolate chips or chunks and return the mixture to skillet. (I like to rub a little more butter on the skillet to make sure nothing sticks)

  • Bake at 325 degrees for 30 minutes, you will want the edges to appear golden brown. If it requires additional time, place foil over the skillet to avoid burning.

  • Best served warm! Top with whip cream or ice cream and enjoy!
