Easy Patatas Bravas Recipe

I love tapas.

In October 2019, I had the chance to visit Barcelona, Spain and fell in love with everything about it. Few places have captured my heart as fast and as thoroughly as Barcelona.

In Spain, you will find Tapas Bars everywhere. Tapas are magical, tasty, bite-sized "appetizers" that you order in abundance and indulge in the same manner.

So, what is Patatas Bravas? Simply put, tasty, bite-sized, fried cubes of potatoes served with a special spicy sauce.

And that's all you need to know. On to the recipe...


For the potatoes

  • 5 russet potatoes

For the seasoning

  • 1 teaspoon black pepper

  • 1 teaspoon sea salt

  • 1 teaspoon smoked paprika

For the sauce

  • 1 cup mayo

  • 1 Tablespoon minced garlic

  • 1 Tablespoon red wine vinegar

  • 1/2 Tablespoon chipotle powder (I use Raspberry Chipolte)

  • 1/2 Tablespoon ancho chile powder

  • 1 teaspoon cumin

  • 1 teaspoon smoked paprika


  • Peel potatoes and cut into small cubes

  • Mix ingredients for the sauce (mayo, garlic, vinegar, chipotle powder, ancho chile powder, cumin, and smoked paprika) until smooth and set aside

  • Mix ingredients for the seasoning (cumin, black pepper, sea salt, and smoked paprika) and set aside (I use a mortar and pestle to grind until smooth)

  • Boil potatoes until slightly tender. I use the tip of my Thermapen to gauge if the tip can easily enter but still encounter some resistance. This should only take 6-7 minutes.

  • When potatoes are tender, remove them from boiling water and place them on a cooling rack to cool. For best results, let the potatoes cool for at least 30-45 minutes.

  • After potatoes are cool, add vegetable oil to the cast-iron skillet, I add about 1" in my 12" skillet. Heat vegetable oil in a cast-iron skillet (I use my trust Stargazer) to 350 degrees Fahrenheit. I check my temperature with my Thermapen, if you do not have one yet, it is the best for checking meat temps, oil temps, etc.

  • When the oil is to temperature, carefully add the potatoes to avoid splashing. Stir often and cook until potatoes are a beautiful golden-brown, usually 6-8 minutes.

  • Carefully remove potatoes and place them on a baking sheet lined with paper towels. Sprinkle seasoning and served topped with sauce or with sauce on the side.
